Saffron Chicken, Boiled Lemon and Green Bean Salad

  • Ingredients

    • 1 lemon, preferably unwaxed
    • 1 1/4 teaspoons salt, plus more to taste, divided
    • Pinch saffron
    • 2 tablespoons finely chopped mint leaves
    • 1 clove garlic, minced
    • 3 tablespoons lemon juice, divided
    • 1/4 cup olive oil, divided
    • 1 1/4 pound skinless boneless chicken breast, pounded to 1/2-inch thick
    • 1 pound green beans, washed and trimmed
    • Cooking spray
    • 2 tablespoons finely chopped fresh thyme leaves
    • 1 tablespoon honey
    • Freshly ground black pepper

    Directions

    Prick the lemon in 3 or 4 places with a fork and place in a small pot with 1 teaspoon of salt and cover with water. Bring to a boil, cover and simmer for about 50 minutes or until the lemon is very tender. Drain and set aside to cool.

    In the meantime, mix the saffron, mint, garlic, 1 tablespoon of lemon juice, 1 tablespoon of olive oil and 1/4 teaspoon of salt in a small bowl. Pour the marinade into a seal able plastic bag, add the chicken and let it marinate while you prepare the other ingredients.

    Steam the green beans for 4 minutes and set aside to cool. Cut into 1/2-inch pieces.

    Preheat a large skillet or grill pan which has been sprayed with cooking spray. Cook the chicken for 3 to 4 minutes on each side, or until cooked through. Set aside to cool. Cut into bite-sized chunks.

    Slice the ends off of the lemon and slice it in half lengthwise. Scoop out the pulp. Slice the peel thinly and then again into 1/4-inch pieces.

    In a large bowl, combine the chicken, lemon, green beans and thyme. In a small bowl combine the rest of the lemon juice and the honey, whisk in the remainder of the olive oil, and season with salt and pepper, to taste. Pour the dressing over the salad and toss to combine.

    Cajun Chicken Pasta

    Ingredients:

    • 3/4 pound rotini, cooked according to pkg
    • 2 tablespoons butter
    • 2 to 3 skinless boneless chicken breast halves, sliced 1/2" thick
    • 3 cloves garlic, minced
    • 1 bunch green onion, chopped
    • 2 tablespoons Cajun seasoning, or to taste
    • 1 teaspoon freshly ground black pepper
    • 1 teaspoon ground red pepper (cayenne)
    • 8 ounces heavy cream
    • 1 green bell pepper, julienned
    • 1 red bell pepper, julienned
    • 8 ounces fresh mushrooms, quartered
    • 1/2 cup parmesan cheese, grated

    Preparation:

    Cook rotini (or similar pasta) according to package directions. Drain; set aside. Melt butter in a large skillet over medium heat. Add chicken; cook, stirring frequently, until browned, about 6 to 8 minutes. Add garlic, onions, Cajun or Creole seasoning and ground black and red peppers. Add bell peppers and mushrooms; stir to combine. Cover and cook for 5 minutes. Uncover; stir in cream and let simmer another 2 minutes. Stir in parmesan cheese. Remove sauce from heat, stir in cooked pasta and serve immediately.

    Southern Fried Chicken

    This is a delicious basic southern fried chicken recipe.

    Ingredients:

    • 4 pounds chicken pieces
    • 1 1/2 cups milk
    • 2 large eggs
    • 2 1/2 cups all-purpose flour
    • 2 tablespoons salt
    • 2 teaspoons pepper
    • 3 cups vegetable oil
    • salt

    Preparation:

    Rinse chicken; pat dry and then set aside. Combine milk and eggs in a bowl; whisk to blend well.
    In a large heavy-duty resealable plastic food storage bag, combine the flour, salt, and pepper.
    Dip a chicken piece in the milk mixture; let excess drip off into bowl. Put a few chicken pieces in the food storage bag and shake lightly to coat thoroughly. Remove to a plate and repeat with remaining chicken pieces.
    Heat oil to 350°. Fry chicken, a few pieces at a time, for about 10 minutes on each side, or until golden brown and cooked through. Chicken breasts will take a little less time than other pieces. Pierce with a fork to see if juices run clear to check for doneness. With a slotted spoon, move to paper towels to drain; sprinkle with salt.

    Layer the bread slices in the baking pan and cover up with the apple pulp. Continue until all bread slices are covered.
    Mix milk with 4 tsp of sugar and eggs in a bowl. Beat well.
    Pour over the apple pulp. Let it set for half an hour.
    Combine together grated coconut, maida and 3 tsp sugar in a separate bowl. Sprinkle over the layer the milk layer.
    Finally, top up with chocolate chips.
    Set the oven to 350 °F and bake for 35-45 minutes. Remove and cool to room temperature.
    Refrigerate until cold.
    Serve chilled.

    Transfer to a bowl, leaving the oil in the pan.
    To the same pan, add the ginger-garlic pastes, turmeric, red chili powder and sauté for a few seconds.
    Add the chicken pieces and fry on high level for about 2 minutes.
    Add the water and bring to a boil. Cover and cook on low level for about 20 minutes.
    Add the tomato puree and fry on high level for a few seconds.
    Now add the fried onion mix and sprinkle salt to taste. Mix well.
    Sauté on a high level for about 2 minutes.
    Stir in the lemon juice.

    Stir it for two minutes then add the dry spices and stir for three minutes till you feel the aroma.
    Shift the vegetables to it and cook it for 4 minutes at high flame with add of salt.
    Lower the flame and cover it for three minutes then open the lid.
    Add rice and soya sauce and stir everything vigorously.
    Lower the flame and cover it and allow it to simmer for five minutes till all the ingredients are tender.

    1 tbsp raisins (optional)
    2-3 tbsp sugar or as desired

    How to make kheer:
    • Put the rice, milk and cardamom in a pan, bring to boil and simmer gently until the rice is soft and the grains are starting to break up.
    • Add almonds, pistachio, saffron and raisins and simmer for 3-4 minutes.
    • Add the sugar and stir until completely dissolved.
    • Remove the rice kheer from heat and serve either warm or chilled.

    ½ tsp red chili (Lal Mirch) powder
    ½ tsp. Kashmiri chili (Lal Mirch) powder
    ¼ tsp. turmeric (Haldi) powder
    1 tbs. coriander (Dhaniya) powder
    1½ cup oil
    3 tbs. white flour (maida)
    1 tsp ginger (Adrak) paste
    ½ tsp. garlic (Lehsan) paste

    For garnishing

    1 to 1 ½ inch ginger (Adrak) (Julian)
    2 tbs. chopped coriander (Dhaniya) leaves
    3 to 4 chopped green chilies
    2 Lemon (sliced)

    Special Nihari spices

    2 tbs. Fennel (Saunf)
    ½ tsp black pepper (Kali Mirch)
    ½ tsp. cumin seeds (Zeera)
    2 green cardamom (Chhoti Ilaichi) seeds
    10 cloves (Laung)
    2 black cardamom (Bari Ilaichi)
    1 stick of cinnamon (Dalchini)
    1 bay leaves (Tezpatta)
    ¼ tsp. nutmeg (Jaiphal) and mace (Javitri)
    2 tbs. coriander (Dhaniya) seeds
    1 stick (Piplee)
    1 aniseed flower (Badian)

    Instructions

    Put ½ cup oil in a pot. Add meat and fry it a little.
    Add salt, chili powder, Turmeric (Haldi) powder, Coriander Seeds (Dhaniya) powder and Ginger (Adrak) paste. Add a little water and mix well.
    Dissolve maida in 1 cup of water and add this to the meat and bring to boil.
    Grind all the special Nihari spices, put the grounded mixture of spices in a fine cotton cloth bundle and add to the meat.

    Fortune Cookies I

     

    Ingredients

    • 1 egg white
    • 1/8 teaspoon vanilla extract
    • 1 pinch salt
    • 1/4 cup unbleached all-purpose flour
    • 1/4 cup white sugar

    Directions

    1. Preheat oven to 400 degrees F. Butter a cookie sheet. Write fortunes on strips of paper about 4 inches long and 1/2 inch wide. Generously grease 2 cookie sheets.
    2. Mix the egg white and vanilla until foamy but not stiff. Sift the flour, salt, and sugar and blend into the egg white mixture.
    3. Place teaspoonfuls of the batter at least 4 inches apart on one of the prepared cookie sheets. Tilt the sheet to move the batter into round shapes about 3 inches in diameter. Be careful to make batter as round and even as possible. Do not make too many, because the cookie have to be really hot to form them and once they cool it is too late. Start with 2 or 3 to a sheet and see how many you can do.
    4. Bake for 5 minutes or until cookie has turned a golden color 1/2 inch wide around the outer edge of the circle. The center will remain pale. While one sheet is baking, prepare the other.
    5. Remove from oven and quickly move cookie with a wide spatula and place upside down on a wooden board. Quickly place the fortune on the cookie, close to the middle and fold the cookie in half. Place the folded edge across the rim of a measuring cup and pull the pointed edges down, one on the inside of the cup and one on the outside. Place folded cookies into the cups of a muffin tin or egg carton to hold their shape until firm.

    Cantonese Style Pork and Shrimp Dumplings

    Ingredients

    • 1/4 pound ground pork
    • 1 cup chopped watercress
    • 1/2 (8 ounce) can water chestnuts, drained and chopped
    • 1/4 cup chopped green onions
    • 1 tablespoon oyster sauce
    • 1 1/2 tablespoons sesame oil
    • 1 teaspoon minced garlic
    • 1 teaspoon soy sauce
    • 1/8 teaspoon ground white pepper
    • 1/8 teaspoon salt
    • 1 (16 ounce) package round dumpling skins
    • 1 pound peeled and deveined medium shrimp

    Directions

    1. In a large bowl, combine the pork, watercress, water chestnuts, green onion, oyster sauce, sesame oil, garlic, soy sauce, ground white pepper and salt and mix together well.
    2. Place 1/2 teaspoonful of this filling onto each dumpling skin. Place 1 shrimp on the filling, slightly wet the edge of the dumpling skin, fold over and pinch with your fingers to form a seal all the way around.
    3. To cook: Pan fry the dumplings in a large skillet over medium heat with oil for 15 minutes, turning over halfway through OR Place them in a pot of boiling water for 10 minutes; drain and serve in hot chicken broth.
